Raspberry dojo, like all other in Aslan’s dojo series, begins with the same base beer. Once the fruit is ripe and picked down in Skagit Valley by our friends at Hedlin Farms, we take the whole fruit and blend it into a “puree” and mix it with our base Saison in a French Oak barrel. We let this beer rest in the barrels for just under a year before blending it for the packaging. This beer has flavors of can you guess… Fresh Raspberries. There is an oakiness that balances the raspberries’ acidity and leaves you feeling like you just had a creamsicle. We love the beers in Aslan’s Dojo Series because it gives us an opportunity fo further experience the magical growing region they call home.
