Coyotas Founder Janet Flores Pavlovich grew up in Hermosillo – the capital of the northern Mexican state of Sonora and the birthplace of the flour tortilla. After working as a chef in Mexico and the United States, she returned to her hometown in Sonora and rediscovered the beauty and simplicity of the flour tortilla.
Janet did not simply want to recreate the tortillas of her childhood – she wanted to make something truly innovative. After countless trials, she developed a tortilla made with only four ingredients and without any grains, gluten, or gums. Today, our team of skilled artisans make Coyotas Tortillas in small batches in our own dedicated facility in Southern California.
