En Cavale Wine was started in 2017 by Wolfgang Weber and Chad Westbrook Hinds as a way to re-examine classic west coast grape varieties like sauvignon blanc and zinfandel through the prism of natural winemaking.
Spicy notes of pink peppercorns, roses and sour plum remind you that this is zinfandel after all, but the baking spice and salty, thirst-inducing freshness could well transport you someplace else - pineau d’aunis or rossese anyone? A bonfire at Ocean Beach? Drink it anywhere, with anyone and anything, and drink lots of it.
